Back in the 1950's when I was a kid in Cicero there were not as many pizza places like there are now. In my family, pizza from the corner pizza place was a special treat. Places like Casciani's on 16th street would take great pride in their pizza. Back when Italian hand made sausage was a family's secret recipe, along with the dough and pizza sauce they were closely guarded recipes. In the 1970's, commercial type pizza was taking over and the local family pizza places were beginning to disapear. New pizza operations were buying all of their ingredients pre-made and shipped frozen, much like most of them do today.

Giorgetti's is named after my father, a baker and pastry chef. Known to his friends and family as 'Giorgie spoons" . This was a guy that lived for pizza. He knew every great pizzeria in Chicago. My dad would drive us 40 miles just to get one of his favorite pizzas.
